What to do with a bunch of Cilantro?

Most often used in summer and often associated with Mexican cooking, cilantro has a floral and citrusy taste. People either like it or do not care for it—it evokes a strong response.

Cilantro is an annual herb that doesn’t tolerate intense cold or heat. In the USA cilantro is the name given to the stalks and leaves, while coriander describes the seeds.

Elsewhere, coriander is the name given to the entire plant.
