What to do with a bunch of Oregano?

Oregano is a woody, perennial herb, part of the mint family, that has been used for medicinal purposes for centuries.

Unlike other herbs, oregano is rarely eaten raw due its very pungent taste, except when added in small quantities, to salads.

Oregano has small round leaves and is found in cuisines all over the world. Italian oregano is a cultivar of Greek oregano and hardy marjoram, with marjoram belonging to the same family as oregano. Greek oregano has white flowers and an earthier taste than Italian oregano but it is not as hardy. Italian oregano (origanum x majoricum) is hardy and may become invasive. Both make good dried herbs.
